Citrus Spinach and Rice Salad

What you need:

+ 2 c. Minute® Brown Rice
+ 1 pkg. (6-oz.) baby spinach leaves
+ 1 large orange, peeled, sectioned
+ 1/4 c. red onion slices
+ 1 c. catalina reduced fat dressing
What to do:
1. Prepare rice as directed on pkg. Cool.
2. Toss rice, spinach, oranges and onion with dressing.
Substitute: Substitute 1 can (11 oz.) mandarin orange segments, drained, for fresh orange sections.
