Cheesy Green Chili Rice

Prep Time: 25 Min. Cook Time: 20 Min. What you need:

+ 1 large onion, chopped
+ 2 Tbsp. butter + 4 c. hot cooked Minute® Rice + 2 c. (16 oz.) sour cream + 1 c. (8 oz.) 4% cottage cheese + 1/2 tsp. salt + 1/8 tsp. pepper + 2 cans (4 oz. each) chopped green chiles, drained + 2 c. (8 oz.) shredded cheddar cheese What to do:
1. In a large skillet, cook onion in butter until tender. Remove from the heat. Stir in the rice, sour cream, cottage cheese, salt and pepper.
2. Spoon half of the mixture into a greased 11-in. x 7-in. baking dish. Top with half of the chilies and cheese. Repeat layers. 3. Bake, uncovered, at 375° for 20-25 min. or until heated through and bubbly. Nutrition Facts: 1 serving (3/4 c.) Nutritional information:

We were so sick of plain rice. This is a wonderful change. I buy New Mexico or Colorado chiles, a freshly roasted bushel, every fall. So am always looking for new recipes to use the green chiles. Thank you! I plan to serve this with chicken fajitas.
