Citrus Tossed Salad

What you need:

+ 3 oranges or 2 grapefruit, peeled, sectioned, and seeded
+ 6 c. torn mixed salad greens
+ 1-1/2 c. peeled jicama cut into thin strips
+ 1 medium red onion, sliced and separated into rings

Citrus Vinaigrette
+ 3/4 c. orange juice
+ 1/4 c. vinegar
+ 1/4 c. olive oil
+ 1/4 c. water
+ 1/4 tsp. pepper
What to do:
1. In a screw top jar combine orange juice, vinegar, olive oil, water and pepper; shake well to mix. [Chill covered for up to 1 week. Before using, let stand at room temperature about 15 minutes and shake well.] Makes 1-1/2 cups dressing.
2. In a large salad bowl, combine orange or grapefruit sections, torn mixed greens, jicama, and onion rings. Drizzle with 1/3 cup vinaigrette; toss. Serve at once.

Makes 6 side-dish servings
Add a gourmet touch to this salad with the fabulous flavor of citrus vinaigrette. Because orange juice replaces part of the oil included in vinaigrette, this vinaigrette has only 2 grams of fat and 34 calories per tablespoon instead of 6 grams of fat and 54 calories.
