* 8 oz. prepared scallops * 2 Tbsp. vegetable oil * 1 small zucchini, cut into strips * 3 stalks celery, sliced * 3 oz. carrots, cut into strips * 3 oz. spring onions, sliced * salt and black pepper
What to do:
1. Cut the scallops into thin slices, leaving the coral whole. 2. Heat the oil in a wok or large pan and fry the scallops for about 3 min. 3. Add the zucchini , celery, carrots and spring onions and stir fry for a further 3 min. until scallops are cooked and vegetables just begin to soften. Season. 4. Serve immediately with Chinese noodles.
